Best Prune Plum Birthday Cake

Our birthdays are 4 days apart.  We have made this cake for about 25 years.  The plums make it moist (like carrot cake).  The crunchy chocolate topping is baked on– so no frosting.  Delicious!

1 cup (or more) dried plums, cut up small with kitchen scissors

1 teaspoon baking soda

1 1/2 cups boiling water (or heat in microwave oven); Combine and soak 5 or more minutes.  Set aside.

3/4 cup shortening (1 1/2 sticks butter or margarine) melted or soft

1 cup sugar

1 egg

Cream together well, until smooth.

2 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

Stir into sugar/egg mixture, alternating with plum mixture.  Stir until smooth and well mixed.  Pour into greased 9 x 13 pan.

1/2 cup each chocolate chips, walnuts or other nuts, and sugar.

Sprinkle chips and nuts evenly over top of cake batter.  Sprinkle sugar over evenly.  Bake at 350 degrees for about 45 minutes, until toothpick inserted in cake center comes out clean and cake is pulling away from the sides of the pan.  No frosting needed!
